Why in the chanuca candle's brocho, said "Shelachanuko", and in the shabos candle's it's "shel shabos"?
(Interesting that in the Loel Asher, it's shelayaum hashevii)

The Baer Siddur (Seder Avodas Yisroel) explains that in order to have 13 words in the Brocho - this is al Pi Kabboloh - we make the contraction Shelachanuko.

This is interesting. Minhag chabad (and I think that's also the Sefaradic minhag) is to say lehadlik ner chanuko, without "shel". Mistomo it's also for the same reason, so it'll be only 13 words.
And why in the Kel Odoun do we say "shelayoum hashevii"?

I note too that in the Korbonous (Eizehu Mekoumon) we say "shelamizbeach" etc.

There are two ways to say it. In the older siddurim it was always Shel Chanukko, Shel Shabbos, but the Maharshal's opinion that Shelachanukko should be said, as one word, was very much accepted. In Chazzal we find sometimes the word Shel put together with what it's applying too, therefore both mesouros have a place.

This Menorah
has been in our family for at least two hundred years (we estimate that it is from the late 1700's). You can clearly see that it says "Shelachanukah" on it as one word.

The Rokeach says that the Nusach is Ner Shel Chanuka in order to have 14 words in the bracha, corresponding to the 14 words in the verse (D'varim 32:7) "Remember the days of old, comprehend the years of the generations, ask your father, he will relate it to you, your elders, they will explain it to you.", together with the addition of 1, which is the verse itself.Yehuda Nathan wrote: The Baer Siddur (Seder Avodas Yisroel) explains that in order to have 13 words in the Brocho - this is al Pi Kabboloh - we make the contraction Shelachanuko.
