For Olienu what is the proper method of bowing and for what reason? I see people do this two ways:
1. From the waist like at modim
2. Bend knees and then bend forward and returning to the erect position

For that matter, is bowing at just the waist at Modim the minhag Ashkenaz?

The Makor Chaim (of the Chavas Yoir, סימן קכ"ז סעיף א) writes that in Modim one bows down once only (no כריעה with the knees). And that is the regular Minhag.
In oleinu we say ואנחנו כורעים ומשתחוים ומודים, so the common Minhag is to do כריעה with the knees at ואנחנו כורעים, and to bow at ומשתחוים. And that is the Minhag brought also in יסוד ושורש העבודה.
