During Kiddush Friday night, does one begin with "Vayechulu HaShomayim..." or "Vayehi Erev Vayehi Voker..."? Does one recite "Vayehi Erev Vayehi Voker..." quietly?

The old Minhag was to start on Yom Hashishi (because the first letters of Yom Hashishi Vayechulu Hashomayim are the name of Hashem), but for many generations the Minhag is to start at Vayehi Erev (because we don't want to cut the Posuk in the middle, and Vayehi Erev is at an Esnachto), but to say it quietly.
